Christmas-spiced Orange & Chia Porridge

Are you feeling festive yet? Or already exhausted from the madness? Here is a bowlful of goodness to inspire you. Chia seeds are a complete protein, the dates and nuts provide instant energy and citrus is a natural "waker-upper". Oh, and the contrast between the cool chia and the warm orange sauce, the sweet fruit and the bitter orange zest, the smooth porridge and the crunch of the toppings....all makes for a truly memorable dish. Put your phone down, turn off the TV, and enjoy this mindfully. Your body says thank you! 

Christmas spiced orange and chia porridge
(serves 2)

Porridge
1 medium ripe banana
3 Tbls chia seeds
1 tsp vanilla
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp clove
14 oz / 400ml coconut milk

Orange sauce & toppings
1/4 c orange or tangerine marmalade
juice of 1 small orange or clementine
1 Tbls freshly squeezed lemon juice
dash cinnamon

2 clementines, peeled and sliced,
4 chopped dates
1/4 c chopped pecans
1 Tbls sprouted buckwheat
1 tsp chia seeds
grated orange zest

For the porridge mash the banana in the bottom of a large bowl. Add the chia seeds and combine. Stir in remaining ingredients and let sit in the fridge for 2-3 hours or overnight.

For the sauce combine marmalade, orange and lemon juice and cinnamon in a saucepan. Let cook until slightly reduced and syrupy. Layer toppings on chia porridge in individual bowls, drizzle with orange sauce and grate orange zest on top. Enjoy!
