Honestly, these pancakes could not be easier. They only have TWO ingredients! I've been seeing recipes like this around the internet and thought I'd have to give it a try. Yes, it really is that easy. I like sweet potatoes for their nutritional profile and high fibre content. They provide a serious amount of vitamin A as well as a whole range of minerals. The eggs provide protein to keep you feeling full well into the morning.
Consider baking a couple of sweet potatoes on Sunday evening and then keep them in the fridge wrapped in foil.
Sweet Potato Pancakes
(serves 1)
1 medium baked sweet potato
2 eggs
optional: splash vanilla or 1/4 tsp cinnamon
Scrape sweet potato flesh into Nutri-bullet or blender and add two eggs. Blend until smooth. Melt coconut oil in a pan, pour out four pancakes. Cook on medium heat for about 6 minutes per side.
Topping suggestions:
- vanilla coconut yogurt with chopped pecans
- grated orange zest, maple syrup and chopped almonds
- stewed apples with cinnamon
- plain yogurt, apricots, chopped walnuts
- sliced bananas, raw cacao nibs, sprouted buckwheat
