I was fortunate at the beginning of my nutrition and wellness journey to have an amazing mentor. Rhian Stephenson is a naturopathic doctor and nutritionist who first treated me as a client, became a friend, and then also became my teacher. With eight years of chemistry behind her she gave me detailed anatomy lessons and showed me how the body processes nutrients. She didn't just tell me answers - she made me use all the information I had available to come up with responses. It is because of Rhian that I found out that I couldn't digest cow dairy. And through her tutelage I started making my own almond milk, cashew cream, and experimenting with raw desserts.
When Rhian gave up her private practice to take over as CEO of Psycle (a London-based organisation of boutique spin & wellness gyms, see www.psyclelondon.com) she put together a detox programme for her members. I helped by doing a few photographs here and there. What remains my very favourite recipe from that collection is her Green Goddess Dressing. Oh. My. Gawd. Is it good!!! I could just drink it. I put it on salads, on fish, on roasted vegetables, poached eggs, beans and pulses, etc. It really is just the best thing ever. Those who have done my Motivating Monday sessions and my supper clubs agree. Now I get to share it with you!
Green Goddess Dressing
- 2 small cloves garlic
- 1 inch ginger, peeled and chopped
- 1/4 c rice vinegar
- 1 c coriander
- 1/2 c basil, chopped
- 1/4 c water
- 1/4 tsp wasabi powder
- 2 Tbls maple syrup
- 3 Tbls olive oil
- pinch Himalayan salt
Place the garlic, ginger, vinegar, herbs and water in a blender or Nutri-bullet. Process until fully combined. Add the remaining ingredients and process again until everything comes together.
