Cherry Nice Cream - A Valentine's Day Treat

A Treat for Your Sweetheart - Valentine's Day is Coming!

Here's a recipe bursting with passionate colour. Give it a try:

Cherry Nice Cream

340g / 12 oz frozen cherries
120ml / 1/2 c coconut yogurt (or yogurt of your choice)
60ml / 1/4 c sunflower seed butter / almond butter
60 ml / 1/4 c coconut milk / almond milk
1 tsp açai powder, optional

Blend all ingredients in a high speed blender and either serve immediately or freeze until you have the consistency you like. Garnish with blackberry sauce (recipe below), red currants, freeze-dried raspberries.

FYI, Almond goes really well with cherries if you can tolerate nuts. Otherwise the sunflower seed butter and coconut is brilliant! You may find you need to add a bit more milk in order for your blender to churn through this volume of frozen fruit. Don't worry - it freezes beautifully.

Blackberry Sauce (again!)

250g / 1 heaping cup blackberries
1 tsp coconut sugar

Place berries and sugar in a pan and heat on medium for 20 minutes, mashing the fruit a bit. Puree in a blender or nutribullet and then sieve, removing seeds.
