Super Simple Salad for Mothering Sunday

This Sunday is Mothering Sunday in the UK. (If you’re reading this from elsewhere you might consider this for whenever YOUR mother’s day falls).  Rather than chocolates why not give your mother something that will truly nourish her – a meal made with love by YOU, her favourite child. :-)

 

Super Simple Salad for Mothering Sunday

 

1 ½ c / 225g cooked quinoa

6 inch / 15cm diced cucumber

¼ c chopped parsley

¼ c chopped mint

½ small red onion, finely chopped

½ c / 100g cooked peas

½ c / 100g edamame

1/3 c / 50g chopped almonds

¼ c / 25g sunflower seeds

2 Tbls hemp seeds

3 ½ oz / 100 g crumbled feta (optional)

 

Top with juice and zest of one lemon and a couple of big glugs of olive oil

 

This recipe is very easy to customise as you see fit.  Add in some cooked asparagus or broccoli.  Top with different nuts or seeds.  If you are so inclined you could add in cubes of cooked chicken or salmon to make it an even heartier meal – although the quinoa, peas, edamame and hemp seeds make it a protein rich salad.
